Es ist Hochsommer, Ferienzeit, und Heinzelcheese wünscht sich auf weite, grüne Bergweiden… Deshalb kommt der Käse des Monats von den Hängen der französischen Pyrenäen, die sich zum Atlantik hin geographisch in baskische und jene des Béarn aufteilen. Von Mai bis September ziehen hier Schafhirten mit ihren Herden durch die Weite der Gebirgslandschaft.
